Cheese Sauce from Dr. Atkins' New Diet Revolution Cookbook (1994):
3/4 cup heavy cream
1/3 cup water
12 ounces cheddar cheese, diced
1 tsp. mustard
1 tsp. salt
1/2 tsp. paprika
In top of double boiler, combine all ingredients. Simmer slowly over hot water, stirring constantly until smooth.
Makes 17 Tbs.
Each Tbs. contains 0.7g net carbs.
